Chilau Sauce has bold low country /gulf coast flavor with plenty onion, bell pepper, celery garlic and a spicy kick of cayenne pepper! It is excellent for making traditional Crab Chilau and delicious as an all purpose flavor enhancer for all types of dishes.  Must try!

History

Cuban, Italian and Spanish immigrants came to Tampa Bay in the late 1800's to work the factories in and around the Ybor City District. Once known as The Cigar Capital of the World, by the 1920's Ybor City was an epicenter for ethnic culture and fusion cuisine. As blue crabs were plentiful in the waters of Tampa Bay it quickly became a cheap go-to source of food for area families. Cuban residents introduced the Crab Croquettes (Tampa Style Deviled Crab), which became the signature street food that remains true to this day.

Another little-known dish called Cangrejo Enchilado (Crab Stew) was also introduced. Somehow, through mixing of cultures, recipe swapping and all the magic that happens when cultures collide, Crab Enchilado got shortened to just Crab Chilau, pronounced "Shalla" or "Shilaw" in my family. The macaroni factories and the Italian diaspora had something to do with spaghetti becoming the staple foundation for the dish while Spanish and African American families brought more spice variations and that Gulf Coast / Soul Food depth.

Every coastal region across the country have a signature seafood stew. Now in the form of a concentrated condiment, Chilau Sauce brings that bold rustic flavor that reminds you of an old-school down-home dish that speaks to your soul!

    I’m from Plant City FL (aka Itty Bitty ) 20min outside of Tampa where the Chilau Sauce was derived for. I grew up with Crab Chilau being a staple in my diet amongst other southern cuisines. Tasting the bold flavors of Chilau Sauce drought childhood memories of the Seafood Pool parties we had. Now that the Flavors have been bottled up I can give my kids a tasted of my childhood.

    I've traveled and eaten alot of places but had never heard of Chilau before. I've had the pleasure of trying many of the recipes Spicecrafters shared and the Bisq-toufee made with the Chilau Original sauce is my FAVORITE!!! If you're a seafood lover and enjoy a good lobster bisque or New Orleans etoufee, then you will LOVE the dish Mike created with this sauce! It was good over rice and when we ran out of rice we ate it on garlic bread! YUM! You'll eat it until you're full and then a take few more bites! I can't wait to make it myself!

    This Chilau sauce is genius the taste was a pleasant change from your traditional seafood boil that still gives you that kick of spice. The texture can be adjusted to how you like. I had both the orginal and florida citrus flavors and they took me back in time to my grandmothers house in Plant City.

    I haven't had Chilau in years! This is the business! Easy enough for me to make, but it still tastes like my great aunt made it. I did try the marinated shrimp, it's cool that I didn't need any other seasoning!

    I'm from the DMV (D.C., Maryland, Virginia) where we know about crabs and seafood. The Crab Chilau Seafood Sauce has a perfect blend of flavors and a little kick for your taste buds. I had the original flavor on some shrimp, crabs, lobster tail, and even sausage. A great addition to my seafood broil.
